Fire to the frost giants' ice. Beer forced past the natural limit of the ferment.

The 15.0% to 15.9% band: the beginning of the truly extreme. Ice-concentrated eisbocks, the mightiest barrel-aged stouts and specially-fermented strong ales live here. Beers pushed beyond the natural ceiling of brewing by cold, craft and audacity.

Norse fire giants were the fiery people of Muspelheim, which was the world of flames. Fiery creatures of molten fires ruled over by Surtr, the one who would use his fiery sword to engulf the whole world in flames during the Ragnarök event. Fire giants are the counterparts to frost giants in terms of fire and ice, respectively.

The Frost Giants — those cold, icy jötnar who represented the crossing into giant kind — stood far back at the 8s. But now, with the 15s, comes the opposite side of the same coin: the Fire Giants, the fiery Muspelheim host, those creatures of flame and magma. It’s an intentional mirror. While the frost giants began the era of giants, the fire giants begin the era of the truly extreme — because 15% is about where beer has to be made to go beyond what fermentation can provide through any natural means.

Past the natural ceiling

The Dragons at 14% represented the high end of what most yeast can do. But go beyond that, and other methods have to be used. The classic approach is the eisbock: freezing a highly alcoholic beer and removing the ice, leaving behind a concentrated and intense product, including the alcohol. Some use specially selected yeast strains, particularly wine or Champagne yeasts, along with extremely careful step-feeding. Whatever the process, the result is a 15-something beer — a beer which was pushed well beyond its natural limit.

Molten intensity

Their intensity mirrors this: molten, thick, warming, spirituous, with great weight and density of dark fruits, molasses, oak, and heat. Fortified wine-strength and beyond, they forego all notions of refreshing qualities altogether. Such beer can be enjoyed as a spirit, sipped from a snifter like embers.

Rare fire, handled carefully

Such beers are rare, very expensive, and produced in small batches – more statements of ambition than anything else. They age well, their fire gradually turning into deep warmth after many years of aging. Opening such a bottle is an experience of handling real power, sharing which in limited portions with people who understand how much effort was made to get there. Beyond the Fire Giants, the Atlas ventures into the realm of storm birds, krakens and behemoths of the far extreme – strengths once thought unattainable for beer.
