A transatlantic IPA that flips tastebuds. Born from an unlikely but delightful collab between Leeds’ experimental brewers and California's Humble Sea in Santa Cruz, it embodies a classic West Coast IPA with a twist of Northern Monk flair.
It pours clean and crisp, built on a simple malt backbone of pale and pilsner grains with just a whisper of dextrin malt for rounded body. The hop play is the real star, with Centennial and Simcoe taking centre stage during the boil, unleashing citrusy resin and oily pine, while Nelson Sauvin drops in dry, bringing unexpected floral notes, elderflower sweetness, and a hint of grape that lifts the whole picture.
As a limited-edition OFS (Old Flax Store) Project release, Northern Monk’s playground for small-batch, experimental creativity, the OFS037 stands out as a tangy love letter to West Coast classics, filtered through the brewery’s bold brewing spirit.
