Perry's: Tremlett (Collectors Card No. 04)

All of You is a 7.2% double dry-hopped West Coast IPA from Track, pairing Citra Dynaboost with Anchovy, Nelson Sauvin and Nectaron. It's the brewery's usual command of modern hops pointed in a noticeably leaner, clearer and more bitter direction.

It pours a bright gold with just a light haze and a persistent white head. The nose offers pink grapefruit, sweet orange and white peach, with subtler watermelon, raspberry and fresh-crushed pine needles behind.

Grapefruit leads the taste – juicy citrus with a sharper edge of peel. Nectaron adds ripe peach and tropical fruit, Nelson Sauvin its usual green grape, gooseberry and gently winey character. And Anchovy, despite the alarming name, delivers red fruit, watermelon and resin rather than anything remotely fish-like.

The malt base is deliberately stripped back, keeping the hops sharply in focus. There's enough body to carry the double dry hop, but none of the dense sweetness of Track's hazier doubles. Instead it gets progressively drier, orange peel, pine and grape skin leading into a steady, satisfying bitterness.

At 7.2% it has proper strength without feeling heavy. The alcohol is well tucked in, and the crisp finish makes it dangerously moreish for something firmly at IPA rather than session strength.

What it does well is combine contemporary hop varieties and concentrates with the structure of a classic West Coast IPA – vivid fruit, but balanced by resin, dryness and genuine bitterness.

Bright, aromatic and refreshingly assertive, this is a good reminder that modern IPA doesn't have to be soft, opaque or sweet. Track may be famous for haze, but All of You shows they can do clarity and bitterness with just as much confidence.
