De Struise

De Struise Brouwers is one of Belgium's most distinctive and uncompromising breweries. Based in Oostvleteren in West Flanders, they take the strength, complexity and bottle-conditioning traditions of Belgian brewing and mix in the sort of experimentation you'd normally associate with the international craft scene.

The origins are genuinely odd: an ostrich farm run by Urbain Coutteau and Philippe Driessens, where beers were first made for visitors before the whole thing turned into a commercial brewery in the early 2000s. The name is a nod to those beginnings – struise can mean ostriches in Flemish, but also carries a sense of strength or sturdiness.

After a spell brewing at other facilities, De Struise settled into a converted school building in Oostvleteren, and the setting suits them down to the ground. This is no polished visitor attraction – it feels like an eccentric working brewery, crammed with tanks, bottles, barrels and a bewildering variety of very strong beer.

They're best known for dark, strong, contemplative stuff. The flagship Pannepot – named after the traditional fishing boats of De Panne – is a rich Belgian strong dark ale, dense with dark fruit, caramel, spice and roasted malt: huge without being crude, which sums up what De Struise do well. The barrel-aged Pannepot Reserva and Grand Reserva add further layers of oak, spirit, oxidation and almost wine-like complexity.

Black Albert matters just as much to the reputation. Billed as a Belgian royal stout, it brings Belgian fermentation character and dark sugar to imperial stout territory, and it's the foundation for countless barrel-aged and blended offshoots – Cuvée Delphine and the sprawling Black Damnation series among them. These beers made De Struise one of Europe's early masters of barrel ageing and big stouts.

The range goes well beyond those landmarks: strong golden ales, sours and mixed fermentation, barley wines, heavily hopped one-offs and Christmas beers all turn up in a vast catalogue. The common thread isn't any one style – it's intensity, maturation and flavours that unfold slowly in the glass.

Their beers often feel less engineered than those from a modern production-line brewery. Carbonation can be lively, fermentation character is often front and centre, and individual vintages vary noticeably. Bottles evolve with age too – sometimes smoothing out beautifully, sometimes picking up earthy or oxidative notes that split opinion.

That unpredictability is part of the appeal. De Struise treat beer as something alive rather than a fixed product, and many releases reward patience, cellaring and comparing vintages side by side. Wonderful for enthusiasts; less so if you just want guaranteed freshness and consistency every time.

Then there's the alcohol. A good chunk of the range sits at or above 10%, propped up by dark sugars, dense malt bills and long barrel maturation. The best examples hide their strength remarkably well, but these are not casual beers – they want small pours, time and your full attention.

The presentation matches the eccentricity: labels that can be rustic, funny, provocative or deliberately old-fashioned, full of elaborate illustrations and recurring ostriches. There's not much visual consistency, but it's all unmistakably De Struise – idiosyncratic, playful and cheerfully indifferent to modern branding conventions.

They hit huge international recognition in the late 2000s, including being named the world's best brewery in RateBeer's 2008 rankings. That says as much about a particular era of online beer culture as anything else, but it shows how quickly De Struise captured imaginations well beyond Belgium.

There are fair criticisms. The sheer number of variations, vintages and barrel treatments can be baffling, some beers push sweetness, alcohol or intensity to the point where balance takes a back seat to spectacle, and availability is patchy – an old bottle can be a very different beast from a fresh one.

Even so, they remain a fascinating brewery, sitting somewhere between traditional Belgian brewing and modern craft experimentation without fully belonging to either. Their best beers have the depth of classics while keeping the unpredictability and ambition of small-scale brewing.

De Struise is not a brewery of restraint, simplicity or easy refreshment. It's a brewery of dark fruit, oak, coffee, spirits, fermentation and time. At its best, it makes beers of extraordinary richness and individuality – beers to open slowly, share generously and remember long after the bottle's empty.
