It was Russell Bisset who established the Leeds-based independent brewery Northern Monk Brew Co. in 2013. The brewery started out making beer in a parent's cellar in Bradford and selling it at farmers' markets with an initial investment of £5,000 from Bisset's grandmother. The Old Flax Store, a Grade II listed building in Holbeck, Leeds, where Northern Monk set up shop in 2014, is still the site of their brewery today.

There are two locations in Leeds where the brewery is active. Visitors to The Old Flax Store can taste freshly brewed beer at the LDS Refectory taproom, which is located in the historic brewery. Northern Monk have increased their production capacity after relocating to a bigger plant on Sydenham Road in April 2017. They have the ability to brew a total of 18 beers at once between the two locations.

The innovative spirit, strong sense of community, and teamwork that characterise Northern Monk are well-known. Collaborating with a historian from the University of Leeds, they brewed Mhór, a beer inspired by a 5,000-year-old recipe from Northern England, as part of a project that celebrates northern history. They have also grown their presence with places such as Leeds city centre's The Northern Market on Great George Street, which adds to the local beer culture.
