Vault City

Vault City Brewing is one of Britain's most distinctive modern breweries, known above all for intensely fruited sour beers that regularly blur the line between beer, dessert and confectionery.

Founded in Edinburgh in 2018, the brewery grew from Steven Smith-Hay's homebrewing experiments into a substantial operation specialising almost entirely in modern sour beer. That focus has given Vault City an unusually clear identity in a craft scene where many breweries turn out broadly similar ranges of pale ale and IPA.

Fruit is central to the appeal. Raspberry, strawberry, mango, peach, blackberry, pineapple and countless other ingredients run through a constantly changing catalogue, sometimes joined by vanilla, marshmallow, pastry spices or other dessert-inspired additions.

The lighter session sours can be exceptionally refreshing, pairing sharp acidity with vivid fruit at fairly modest strength. At the other extreme, the heavily fruited imperial and pastry sours turn thick, sweet and almost smoothie-like.

There's an unmistakably Scottish sense of humour at work too. Releases inspired by Iron Brew and Buckfast-style flavours sit alongside beers recalling sweets, cakes and childhood desserts – giving the brewery an identity that's playful without feeling anonymous or internationally generic.

The inevitable criticism is that subtlety is rarely the priority. Some releases pack in so much fruit, sweetness and flavouring that the underlying beer becomes hard to detect, and drinking several in a row can get exhausting fast.

But Vault City understands this style extremely well. The acidity is generally clean, the fruit flavours are vivid, and even the most extravagant beers usually deliver exactly what the can promises.

There's more brewing skill involved than the colourful presentation suggests, too. Producing sour beer consistently at significant scale demands careful control of fermentation and acidity – particularly with large quantities of fruit and other ingredients in the mix.

Visitors to Edinburgh can explore the range at The Wee Vault near Haymarket, a compact tasting room and bottle shop built around a remarkable 24-tap system pouring Vault City alongside selected guest beer, cider and mead.

Vault City won't appeal to everyone. Drinkers devoted to traditional bitter, dry lager or restrained mixed-fermentation lambic may find its sweeter creations almost deliberately outrageous.

For lovers of modern fruit sour, though, few British breweries have such a recognisable identity. Vault City is colourful, inventive and unapologetically excessive – and has played a major role in turning sour beer from a specialist curiosity into something far more approachable for mainstream drinkers.
