Yonder

Yonder Brewing is an independent Somerset brewery best known for fruit-filled sour beer, mixed fermentation and an adventurous approach to locally inspired ingredients.

Founded in 2018 by Jasper Tupman and Stuart Winstone, Yonder operates from a converted farm site in the Mendip Hills, close to Wells. It calls itself a "modern farmhouse brewery" – a description that captures both the rural setting and a genuine interest in fermentation, seasonality and flavours drawn from the surrounding landscape.

Sour beer sits at the heart of the identity. The heavily fruited goses pair sharp acidity with enormous quantities of raspberry, mango, passion fruit, guava and more. The texture can be thick and almost smoothie-like, and additions like vanilla occasionally push things fully into liquid dessert territory.

Raspberry Gose is the clearest expression of the brewery's accessible side. Bright, tart and unmistakably fruity, it helped make Yonder's name and has picked up major recognition in regional independent beer competitions.

But the brewery is equally capable of much stranger work. Barrel ageing, wild yeast and mixed cultures feature in beers that develop slowly, building flavours of fruit, wood, earth and gentle fermentation funk. Some releases use foraged or unconventional ingredients – birch sap, chaga fungus – and there's a genuine interest in where they come from rather than experimentation for its own sake.

Yonder also makes pastry stouts, pales, IPAs, lagers and more traditional ales. The strongest dark beers can be intensely sweet and indulgent, while the lagers and pales reveal a cleaner, more restrained side that's sometimes overshadowed by the colourful sour range.

The great strength here is clarity of flavour. A Yonder beer built around raspberry, chocolate or tropical fruit rarely leaves you wondering what was intended. That makes much of the range approachable and entertaining – especially for people who find conventional bitter beer less appealing.

That directness can also be a limitation. The heaviest fruit sours can resemble alcoholic smoothies more than traditional beer, and the pastry-inspired releases sometimes tip into excessive sweetness. Anyone after dryness, subtle malt or firmly bitter hops will need to choose carefully.

Still, there's more technical depth beneath the playful presentation than the most extravagant beers suggest. Yonder's experience with mixed cultures, barrels and fermentation sets it apart from breweries that lean entirely on fruit purée and flavouring.

This is a brewery that's inventive, distinctive and deeply connected to its Somerset setting. The beers run from clean and refreshing to gloriously unreasonable, but they almost always carry a clear sense of purpose.

For drinkers who enjoy fruit, acidity and adventurous fermentation, Yonder is one of Britain's most compelling modern breweries.
