Simcoe is one of those hops that almost feels essential to modern craft beer. Yakima Chief Ranches released it in 2000 and it was an instant hit with brewers looking for something bold, aromatic and a little bit wild. It is sometimes described as a dual-purpose hop, used for bitterness and aroma, but the magic tends to come through in late additions and dry hopping. It can add a beautifully layered character to the glass with notes of pine, grapefruit, passion fruit, apricot, berry and a slightly earthy or resinous edge. Simcoe has that classic American hop intensity but it’s not just a blunt citrus bomb. At its best, it imparts a deep, almost “dank” complexity to beer, with bright fruit notes dancing with forest floor, pine resin and herbal notes. This makes it especially effective in American pale ales, IPAs and double IPAs where it can stand proudly on its own or combine beautifully with other big-hitting hops. Simcoe is indeed a hop with a lot of character, to my mind. Depending on its use it can be sharp, juicy, sticky, piney or tropical - probably why it has been so popular for almost three decades. In a single hop beer it is expressive and distinctive, but with other hops, it adds depth and structure, giving the beer that extra bite under the fruit.
