What is Baltic Porter?
Baltic Porter is the dark, velvety heavyweight of the lager world. Born around the Baltic Sea in the 18th and 19th centuries, it’s inspired by English porters but brewed with cold-fermenting lager yeast. The result? A big, smooth and slightly mysterious beer that balances roasted malt, dark fruit and chocolatey sweetness - without the burnt bitterness of a stout.
It’s a slow sipper: rich but refined, strong but soothing. If imperial stout is a thunderstorm, Baltic porter is a midnight train ride under the stars.
How It’s Brewed
Traditionally brewed with lager yeast at low fermentation temperatures, Baltic porters undergo a long cold maturation, which smooths out the stronger alcohol content. Some versions (especially historical ones) may use ale yeast - but the modern standard is cold-fermented, clean and silky.
The grain bill includes dark Munich, chocolate and crystal malts, often with a touch of black malt for depth. Hops take a back seat, just adding balance. ABV typically ranges from 7% to 10%, with low to moderate carbonation and a deep brown to near-black colour.

- Sinebrychoff Porter (Finland) – A classic with cocoa, licorice and smoothness.
- Põhjala Öö (Estonia) – Modern Baltic porter with intense richness and coffee.
- Samuel Smith’s Taddy Porter (UK) – Not technically a Baltic, but often cited for its influence.
How Baltic Porter Differs from Similar Styles
Baltic porter shares DNA with English porters and imperial stouts, but it’s smoother, cleaner and often less aggressively bitter. Unlike a typical porter, it’s usually stronger and brewed with lager yeast. Compared to imperial stout, it’s subtler - more chocolate and dark fruit, less burnt roast and hops.
If you like the depth of a stout but want it silkier and a bit more polished, Baltic porter is your jam.
Food Pairings
This style loves rich and roasted flavours - try it with chargrilled mushrooms, black bean stew, caramelised onions or dark chocolate desserts. A wedge of aged gouda or a smoky cheddar also works beautifully.

Most modern Baltic porters are brewed with lager yeast and cold-fermented, so technically they’re lagers. But a few are brewed with ale yeast - the defining factor is the smoothness and richness, not just the yeast.
Is Baltic Porter the same as Imperial Stout?
Not quite. Both are strong, dark and rich, but Baltic porters are cleaner and silkier, with less aggressive roast and bitterness. They’re like imperial stouts that went to finishing school.
