What is Tripel?

Tripel is a strong, pale Belgian ale known for its lively carbonation, fruity and spicy fermentation character and remarkably dry finish.

Typical flavours include pear, apple, orange, lemon and light stone fruit, joined by pepper, clove and gentle floral notes. Pale malt brings bread, grain and honey, while the alcohol adds warmth without - ideally - ever turning harsh.

Although tripel is usually golden and can look light and refreshing, it commonly sits between 7.5% and 9.5% alcohol. The combination of dryness, carbonation and restrained body hides that strength remarkably well.

A good tripel should feel elegant rather than heavy. Malt, hops, yeast, alcohol and carbonation should all be noticeable, but none should overwhelm the others.

How It's Brewed

Tripel is normally brewed with pale Pilsner malt, giving its characteristic golden colour and clean grain flavour.

Brewers commonly add highly fermentable pale sugar during brewing or fermentation. The sugar boosts the strength without adding the heavy body that malt alone would bring.

That's essential to the style. Despite its strength, tripel should stay relatively light, dry and dangerously drinkable rather than thick or syrupy.

Fermentation uses an expressive Belgian ale yeast. Depending on the strain and conditions, it can produce pear, apple, citrus, banana, pepper or clove.

Traditional European hops like Saaz, Styrian Goldings or other noble varieties add floral, earthy, herbal or spicy character. Bitterness is fairly firm for a Belgian ale, helping balance the alcohol and pale malt.

Tripel is often bottle-conditioned, creating high natural carbonation and letting the beer develop after packaging. Extended conditioning also softens the alcohol and knits the yeast-derived flavours together.

Famous Examples

How Tripel Differs from Similar Styles

Tripel is most often compared with Belgian golden strong ale. Both are pale, powerful and highly carbonated with fruity, spicy yeast character - but golden strong ale is generally lighter-bodied, paler, drier and fizzier, with more obvious alcohol. Tripel normally carries more malt flavour, firmer bitterness and a slightly fuller body.

Belgian blond ale is weaker, softer and less bitter, emphasising gentle malt and fruit. Tripel brings more spice, more hop character and considerably more strength.

Dubbel is darker and more malt-led, full of caramel, raisins, plums and dark bread. Tripel is pale, drier and more bitter, leaning towards citrus, pale fruit and peppery spice.

Belgian dark strong ale - often called quadrupel - is darker, richer and more closely tied to dark fruit, caramel and warming sweetness. Tripel should feel brighter, leaner and more refreshing.

And it differs from strong lager. Both can be pale and powerful, but tripel uses expressive ale yeast and shows far more fruit and spice.

Food Pairings

Tripel is particularly good with rich, creamy and gently spiced food. The carbonation and dryness cut through fat, while the fruit and pepper complement aromatic ingredients.

Good vegetarian pairings include mushroom risotto, vegetable gratin, baked Camembert, grilled halloumi and creamy pasta. It also works well with Thai curry, vegetable tagine, falafel, spiced couscous and dishes featuring coriander, ginger or citrus.

Suitable cheeses include Brie, Camembert, goat's cheese, Gruyère and mature Gouda. For dessert, try apple tart, pear cake, lemon cheesecake or bread pudding - very sweet chocolate desserts can swamp the beer's comparatively delicate fruit and spice.

FAQs About Tripel

Why is it called tripel?
The exact historical origin of the name is uncertain. It generally indicates a beer stronger than a dubbel, rather than meaning it contains three times as much malt or alcohol.

Was Westmalle the first tripel?
Westmalle popularised the modern pale tripel when it introduced the beer that evolved into Westmalle Tripel during the 1930s. Its influence established the model countless breweries followed.

Is tripel a Trappist beer?
Not necessarily. Several famous tripels come from Trappist monasteries, but any brewery can make the style. "Trappist" describes where and under what conditions a beer is produced, not the style itself.

Is tripel sweet?
There can be gentle malt and fruit sweetness, but the finish should normally be dry. High attenuation, carbonation, hops and alcohol stop it becoming cloying.

Why is tripel so strong but relatively light-bodied?
Brewers often use highly fermentable sugar to raise the alcohol without the heavy body and sweetness a purely malt-based recipe would leave behind.

Is tripel bitter?
Moderately to firmly so, particularly compared with dubbel or Belgian blond. The bitterness balances the alcohol and pale malt, but shouldn't resemble a heavily hopped IPA.

Does tripel contain spices?
Some breweries add them, but much of the pepper, clove and fruit character traditionally comes from the yeast. Added spices aren't required.

Is tripel always pale?
Traditional examples range from deep yellow to gold. Dark beers labelled "tripel" may use the name commercially, but they fall outside the usual style definition.

Can tripel be aged?
Yes. Strong, bottle-conditioned examples can develop softer alcohol, honey, dried fruit and gentle sherry-like notes - though the fresh citrus, hops and lively yeast character will gradually fade.

What temperature should tripel be served at?
Around 7–11°C works well. Too cold and the fruit, spice and malt go quiet; too warm and the alcohol becomes more prominent.

What glass should be used for tripel?
A chalice, goblet or tulip is ideal - room for the big head, while concentrating the fruity, spicy aroma.
