What is Traditional Stout?
Traditional stout is a dark British ale characterised by roasted grain, coffee, dark chocolate and restrained hop bitterness.
The colour normally runs from very dark brown to black, often beneath a creamy beige or tan head. Typical flavours include espresso, cocoa, toast, liquorice and lightly burnt grain, sometimes joined by caramel, nuts or dark fruit.
The style can finish dry and firmly roasted or hold onto a modest malt sweetness. Either way, it should stay recognisably beer-like rather than tasting like chocolate syrup or an elaborate liquid dessert.

How It's Brewed
Traditional stout normally starts with pale ale malt supported by dark roasted grains.
Roasted barley, black malt and chocolate malt bring the black colour and those familiar flavours of coffee, cocoa, toast and char. These grains need careful balancing - too much and the beer turns acrid, ashy or burnt.
Crystal or brown malt can add caramel, biscuits and dark fruit, while oats create a smoother texture. Traditional brewing sugars or syrups may also fine-tune the colour, strength and body.
British hops like Fuggles, East Kent Goldings, Challenger and Target provide the bitterness plus subtle earthy, herbal or spicy notes. Hop aroma stays low - malt and roasted grain are the stars here.
Fermentation uses British ale yeast, which may add restrained plum, apple, raisin or red fruit. The beer might be served on cask, naturally conditioned in the bottle or poured on nitrogen for that smoother, creamier texture.

How Traditional Stout Differs from Similar Styles
Traditional stout is closely related to porter - the two share historical roots, and the line between them isn't always clear. Stout generally leans harder on roasted grain, coffee and dark chocolate, while porter favours brown malt, caramel, nuts and softer toast. In practice, individual beers can fit either description.
Dry stout is leaner and more sharply roasted, with a particularly dry, bitter finish. Traditional British stout can carry a fuller body and more balanced malt sweetness.
Milk stout contains lactose, an unfermentable milk sugar adding extra sweetness and body. Traditional stout doesn't require lactose and is often less obviously sweet.
Oatmeal stout uses enough oats to create a noticeably silky, rounded mouthfeel. Some oatmeal stouts also qualify broadly as traditional stouts, but the oats are central to their more specific identity.
Foreign extra stout is stronger and more intense, commonly 6.5% or above, with bigger roast, bitterness, dark fruit and warmth. Imperial stout goes further still - traditional stout is built for drinking by the pint, while imperial stout is a slow sipper served in smaller measures.
And pastry stout uses vanilla, chocolate, coffee, fruit, marshmallow or confectionery for an overtly dessert-like experience. Traditional stout gets most of its character from malt, roasted grain, hops and fermentation.
Food Pairings
Traditional stout pairs especially well with roasted, smoked and earthy food.
Good vegetarian pairings include mushroom pie, lentil shepherd's pie, vegetarian sausages, roasted root vegetables and smoked-tofu dishes. The coffee and chocolate flavours complement mature Cheddar, smoked Gouda, blue cheese and other big cheeses.
For dessert, try chocolate cake, coffee cake, tiramisu, brownies or sticky toffee pudding - drier examples work particularly well, their roasted bitterness balancing the sweetness. It's also an excellent cooking ingredient, adding depth to mushroom gravy, vegetarian stew and rich savoury sauces.

Is traditional stout an official beer style?
Not under that exact name. It's a useful broad category covering classic British stouts that might otherwise be classified more narrowly as dry, oatmeal, milk or strong stout.
Did stout originate in Ireland?
Stout is strongly associated with Ireland, but its origins are British. The word initially described a stronger version of porter before becoming the name of a dark beer family in its own right.
Is stout always stronger than porter?
No. "Stout" originally meant strong, but modern stouts can be fairly modest in alcohol. A stout may well be weaker than a porter - strength alone no longer separates them.
Is traditional stout always dry?
No. Some examples finish dry and roasted, others keep caramel or chocolate sweetness. They should generally be less sugary than milk or pastry stout unless they specifically belong to one of those categories.
Does traditional stout contain coffee or chocolate?
It may, but neither is necessary. Roasted barley and dark malt naturally produce flavours resembling coffee, cocoa and bitter chocolate.
