What is Witbier?
Witbier is a pale, cloudy Belgian wheat beer known for its refreshing citrus, gentle spice and soft, creamy body. The name simply means "white beer" - a nod to the milky, almost glowing appearance created by wheat and yeast suspended in the glass.
It's light and easy-drinking, but far from bland. Orange, lemon, coriander and pepper are the usual suspects, backed by subtler notes of bread, honey and vanilla. A gentle tartness keeps everything bright, and lively carbonation makes it one of the most refreshing styles around.
Unlike German wheat beer, much of witbier's character comes from added spices. Coriander and orange peel are the traditional pair, though brewers sometimes reach for chamomile, grains of paradise or other botanicals.
How It's Brewed
Witbier uses a hefty proportion of unmalted wheat alongside malted barley, and some recipes throw in oats for extra softness and body.
Hops stay in the background - just enough bitterness to balance the grain and spices. The coriander and orange peel (bitter or sweet) go in during the brew, and should complement the beer rather than shout over it.
Fermentation uses an expressive ale yeast that adds gentle fruit and spice of its own. The beer is left unfiltered - hence the trademark haze - and served with fairly high carbonation.
The result should be light, creamy and effervescent, with a dry or gently tart finish. It's often thought of as a summer beer, but a well-made witbier is refreshing all year round.

How Witbier Differs from Similar Styles
Witbier often gets confused with German hefeweizen, since both are cloudy wheat beers. The big difference is flavour: hefeweizen gets its banana and clove character from fermentation alone and is traditionally brewed without spices, while witbier is lighter and more citrus-led, with coriander and orange peel doing much of the work.
It's also distinct from American wheat beer, which usually uses a cleaner yeast and little or no spicing, leaning instead on grain or hops. Witbier is defined by that combination of wheat, yeast, citrus and botanicals.
Some bars serve witbier with a slice of orange - but a good one should already have plenty of citrus character without it.
Food Pairings
Witbier loves fresh, lightly spiced food. The citrus and carbonation lift salads, while the soft wheat character works beautifully with creamy or salty ingredients.
Good vegetarian matches include goat's cheese salad, grilled halloumi, vegetable spring rolls, falafel, Thai curries and lightly spiced couscous. It's also lovely with lemon pasta, asparagus, soft cheeses and anything heavy on fresh herbs.

Why is witbier cloudy?
The haze comes from wheat, proteins and yeast staying suspended in the beer. It's a traditional feature of the style, not a fault.
Does witbier always contain orange peel and coriander?
They're the traditional flavourings and turn up in most examples, but recipes vary. Some brewers use other citrus fruits, spices or botanicals instead.
Is witbier the same as wheat beer?
Witbier is one type of wheat beer. Hefeweizen, American wheat beer and Berliner Weisse are wheat beers too, but each has its own ingredients, fermentation character and flavour.
Is witbier sweet?
There can be a soft grain sweetness, but it shouldn't taste sugary. Citrus, gentle acidity, spice and lively carbonation usually keep the finish refreshing.
Should witbier be served with orange?
It can be, but it doesn't need to be. Traditional Belgian examples already get their citrus from orange peel and fermentation, and a slice can actually mask some of the subtler flavours.
